Making a gravy using turkey drippings is pretty simple and the results are delicious. You can use almost any recipe for gravy and then just add the drippings from your grilled turkey.
- Place a large drip pan filled with a liter of water, beer, wine, or juice on the charcoal grate (charcoal grills) or the Flavorizer Bars (gas grills). If you don’t add water, or some other liquid, the drippings with become too dry and crispy to use.
- Place the turkey directly on the cooking grate, or use a roast holder for the turkey, and center it directly over the pan.
- Add the drippings to the gravy that you’ve prepared after the turkey has come off the grill. If you are using a recipe that calls for cooking the turkey in a pan, strain the pan liquid through a fine mesh sieve into a large gravy separator and discard the solids. Then, proceed with following the specific instructions for the recipe that you're using.
