Before your first cook, you will need to season your Flat Top Griddle. Seasoning creates a stick-resistant, protective coating so you can make delicious eggs, pancakes, burgers, and fajitas for years to come. A seasoned griddle is dark black from edge to edge. To achieve this, season your griddle at least 3 times before use. Here's how:

The griddle has been coated with a food-grade mineral oil for protection. This oil is not to be used for seasoning. Open the bag containing your Griddle over a waste bin. Dispose of the bag and then transfer the griddle to your sink.

Hand wash your griddle in warm, soapy water and scrub vigorously with a nylon brush or soft sponge just before the seasoning process. Thoroughly dry. Note: This will be the ONLY TIME you use soap and water on your griddle. Warning: Do not burn off the mineral oil.

Place your Weber CRAFTED Frame Kit in your grill and preheat your grill with the lid closed to 400-500 F.
- Use a low lint paper towel or cotton cloth to apply about 1 Tablespoon of a neutral oil over all the surfaces (top, sides and bottom) of the griddle. Then wipe off any excess oil so it appears dry. Excess oil will not season properly.
- Using heat-resistant gloves or mitts, place the griddle into the hot grill, close the lid, and allow it to heat up for 30 minutes. The surface will get start to darken and get smokey.
- Use a set of grill tongs to hold a paper towel, then use the towel to wipe any uneven spots or drips of oil on the griddle.
- When the smoking has stopped, your griddle now has 1 coat of seasoning. Repeat steps 3-6, two (2) more times in order to build the seasoning, allowing the griddle to completely cool down between applications.
